Zubereitung

Gemüse putzen und in leicht gesalzenem Wasser bissfest garen, abkühlen lassen. Petersilienwurzel raffeln, Karotte und Paprika fein würfeln. Bohnen in ca. 1 cm lange Stücke und Staudensellerie in feine Scheiben schneiden.

Für das Dressing Schalotten schälen, Schnittlauch und Petersilie waschen und klein schneiden. Holunderblütenessig mit Gemüsebouillon, 2 EL heissem Wasser, Salz und Pfeffer verrühren. Alle übrigen Zutaten dazugeben, gut vermischen und abschmecken. Den Salat ca. 20 Minuten durchziehen lassen.

Den Salat auf die Tarteletts verteilen. Die schwarzen Oliven halbieren. Vom Chavroux mit einem Teelöffel Nocken abstechen und mittig auf den Salat setzen. Mit einer Olivenhälfte garnieren.

Tipp

Nach Belieben das Gemüse austauschen, mit Tomate, Erbsen oder kleinen Brokkoliröschen.
