Für das Kartoffeldressing Kartoffel pellen und in eine Schüssel reiben. Zwiebel schälen und fein hacken. Speck in kleine Würfel schneiden, knusprig ausbraten, Zwiebel zugeben, kurz mitbraten. Zu den Kartoffeln Instant Fleischbrühe und Wasser geben und glattrühren. Öl, Salz, Pfeffer, Speck, Zwiebel und Schnittlauch zufügen, unterrühren und abschmecken.

Für die Croutons das Landbrot in ca. 1,5 cm grosse Würfel schneiden. In Butter unter ständigem Rühren goldbraun braten. Herausnehmen und abkühlen lassen.

Feldsalat putzen, waschen, gut abtropfen lassen. Mit dem Roastbeef und den Käsescheiben dekorativ anrichten. Mit dem Dressing beträufeln und den Croutons bestreut servieren.

Tipp

Für ein Picknick den Teller erst unterwegs anrichten. Mit kühlem Cidre geniessen.
