Zubereitung

Pesto zubereiten: Frisches Basilikum, Knoblauch und Pinienkerne miteinander pürieren. Dann Parmesan, Olivenöl und Zitronensaft hinzufügen und für einige weitere Sekunden
pürieren. Mit Salz und Pfeffer würzen.

Aubergine in Scheiben schneiden und in einer heissen Pfanne mit ein wenig Olivenöl anbraten.

Burgerbrötchen in einer heissen, befetteten Pfanne leicht anbraten.

Burger belegen: Auf beide Brotscheiben Pesto streichen und ein paar Rucola-Blätter legen. Anschliessend 2-3 Scheiben gegrillte Aubergine mit etwas Pesto darauf legen. Zwei Fol Epi Scheiben darauf schichten und nochmals mit Auberginenscheiben und Rucola beschichten. Burger schliessen und sofort geniessen!
