Die Teigwaren in einem Topf kochen. Während das Backen, die Karotten und Gurken schälen. Mit einem Schälmesser, die Gemüse (Karotten, Gurken und Radieschen) in sehr feine Scheiben hobeln oder schneiden.

Den Fol Epi ebenfalls in Scheiben schneiden. Die Oliven in 4 Stücke schneiden und alles zusammenmischen. Danach alles mit den Tagliatellen mischen. Die grünen Zitronen mit der Hand ausdrücken, mischen, salzen, Pfeffer geben und 5 Esslöffeln von Olivenöl beifügen um eine Vinaigrette zu haben. Der Salat würzen.
