Den Speck in dünne Streifen schneiden. Die Zwiebel schälen, halbieren und in feine Streifen schneiden. Die Speck- und Zwiebelstreifen in der heissen Butter andünsten. Den Rindsfond und die Maroni dazugeben, aufkochen. 5 Min. kochen lassen.

Chaumes in kleine Stücke schneiden, hinzufügen und leicht schmelzen lassen. Peterli- und Thymianblättchen abzupfen, hacken und untermischen. Die Sauce mit Salz und Pfeffer abschmecken.

Die Teigwaren in reichlich Salzwasser bissfest kochen, abgiessen und mit der heissen Sauce vermischen. Sofort servieren!

Tipp

Zum Öffnen der Maronen, die Schale an der Oberseite kreuzweise einritzen, 10–15 Minuten kochen.
