Zubereitung

Die Beluga-Linsen während 20 Minuten bissfest garen. Abgiessen, mit kaltem Wasser abschrecken und gut abtropfen lassen.

Gemüse waschen, putzen bzw. schälen und alles in sehr kleine Würfel schneiden, in Öl ca. 4-5 Minuten andünsten. In eine Schüssel geben, Beluga-Linsen und Petersilie zufügen. Zutaten für das Dressing miteinander verrühren, über die Beluga-Linsen geben, untermischen und 15 Minuten durchziehen lassen.

Amuse Bouche nach Packungsanweisung in 10 Scheiben schneiden und mit Pistou bestreichen. Schinken in Streifen schneiden und die Amuse Bouche Käsescheiben damit umwickeln. Die Häppchen in Öl von jeder Seite ca. 1 Minute braten.

Beluga-Linsen-Salat auf kleinen Tellern anrichten und je ein Amuse Bouche Häppchen darauf anrichten.

Nach Belieben mit Vollkornbaguette servieren.
