Die Linsen verlesen, waschen, in kaltes Wasser geben und mit einer ganzen, geschälten Zwiebel und den Lorbeerblättern etwa 20 Minuten kochen.

In der Zwischenzeit den Schinkenspeck fein würfeln und anbraten. Die Schalotten schälen und fein hacken. Oliven- und Nussöl, Weissweinessig und Senf zu einer Vinaigrette verrühren und die Schalotten hineingeben. Mit Salz und Pfeffer würzen. Peterli hacken und unterrühren.

Die Linsen abgiessen und abtropfen lassen. Die Vinaigrette nach Geschmack unter die Linsen mischen, etwas abkühlen lassen. Den Saint Albray -Käse würfeln und gemeinsam mit dem Schinkenspeck darüber geben. Mit Baumnüssen garniert servieren.
