Couper le fromage en tranches. Laver, rincer et bien égoutter la doucette. Hacher grossièrement les noix et les noisettes, couper le lard en fines lanières et le rissoler jusqu’à ce qu’il soit croustillant. Couper les raisins en deux et les faire revenir brièvement avec les noix, les noisettes et le lard.

Eplucher et couper les oignons rouges en fines lamelles pour la vinaigrette. Mélanger avec le reste des ingrédients, ajouter l’huile et assaisonner.

Mélanger la doucette avec la vinaigrette, le fromage et les autres ingrédients de la poêle et dresser joliment.
